Introduction

Ingredients

    1 can garbanzo beans
    1 large cucumber diced
    1 medium or 2 small tomatoes diced
    I small red onion diced
    1/4 cup sliced black olives
    1/3 cup fresh cilantro
    3 Tbsp fresh mint
    juice of 1-2 limes
    3 Tbsp yummy olive oil
    1/2 tsp cayenne pepper
    sea salt to taste

Tips

Plenty spicy with the cayenne - adjust as needed.
Can add 3/4 cup quinoa for added protein.


Directions

Mix veggies and herbs with beans
Separately combine olive oil, lime juice, cayenne and salt to create dressing.
Add dressing to salad and let rest at least 15 mins.

    Chick peas are my go-to food! Being vegetarian I find use for them in almost all my everyday meals. This salad is great for lunch or dinner! I substitute black olives for green ones or non at all :) - 1/20/18
