Ingredients

    3 Cups White rice (cooked)
    7 Oz. Chopped Chicken (cooked)
    1/2 Cup Diced Onions
    1/2 Cup Diced Carrots
    2 Cloves Garlic
    1 Cup Frozen Peas
    3 Mushrooms, Slices
    1/2 Cup Chicken Stock
    3 Eggs
    2 Tbsp Soya Sauce
    Cooking Spray

Tips

Additional topping: Cilantro, Green Onion, Hot peppers.


Directions

Spray frying pan with cooking spray, add onions, carrots and garlic, fry until carrots are tender. Add frozen peas and chicken stock, cook for a few minutes until peas are almost done. Add Chicken and mushrooms and fry until heated. Meanwhile fry eggs in a separate frying pan. Add rice to chicken mixture and mix together. Add soya sauce and eggs and stir together.

Serve Immediately
