Ingredients

    1/4 c. low sodium soy sauce
    1/4 c. vegetable oil (canola is best for grilling)
    2 T lime juice
    2 T ginger root, grated or minced
    1/2 tsp. black pepper
    1 clove garlic, minced
    zest of 1 lime
    1.5 boneless skinless Chicken breasts (3 pieces), in 1'' chunks
    pineapple, cubed (calories for 1/2 a pineapple)
    1/2 red onion, in bite-sized chunks
    1 bell pepper, in bite-sized chunks

Tips

Definitely soak your skewers, it keeps them from burning on the grill!


Directions

Mix together first 7 ingredients. Divide in half and pour into two separate plastic bags. Add the chicken to one bag and the veggies to the other. Don't marinate the pineapple! Leave in the fridge for at least 30 minutes, but longer is always better. While the chicken is marinating soak the wooden skewers in water.

To assemble kabobs put chicken, veggies and pineapple on skewers however you see fit. Grill for 10-15 minutes, we usually do it on high to burn the onions a little. Enjoy!
