Ingredients

    1 box of Manicotti noodles
    1 jar of Spaghetti Sauce (Bertolli Portobello Mushroom with Merlot is a very good choice)
    20 oz Light Ricotta Cheese
    1 cup of Mozzarella Cheese
    1/4 cup Parmesan Grated
    Dash Nutmeg
    Dash Ginger
    1TBSP Cinnamon

Directions

Yield - Makes 12 Manicotti (serving size is 2 manicotti per person)

Preheat Oven - 375

Boil Manicotti for no more than 5 minutes or it will be too soft to fill.

Prepare the filling while manicotti is boiling in a large bowl:
- Frozen Spinach - microwave as directed and soak off excess water before putting into bowl.
- Fold in Ricotta cheese to the spinach
- Fold in Mushrooms, parmesan, mozzarella (hold back some for topping)
- Fold in a dash of nutmeg and ginger
- Fold in cinnamon

Spray a 9x13 glass pan with Pam

- Pour spaghetti sauce on the bottom of the pan
- Pour cold water over the 1/2 cooked manicotti for easier handling.
- Using a Pampered Chef cake decorator, I fill the manicotti with the mixture (you can use a zip lock bag and cut off the end too).
- Place the noodles in a row in the pan
- Pour the balance of the spagetti sauce over the manicotti
- Top with remaining mozzerella and parmesan
- Bake for 30-40 minutes until bubbling

Serve with salad and fat free cottage cheese. A great family dinner!

    Very Good
    Once I figured out how to stuff the manicotti, this was easy! Very tasty, and very filling. I had half of the spinach/ricotta left over, so I made a quiche with the rest. - 6/14/11

    Incredible!
    This was so good. I substituted fresh minced garlic for the cinnamon but otherwise followed the recipe. My husband had seconds and even the dog licked his bowl with a bite for him. - 2/25/10
