FOLLOW INSTRUCTIONS FOR CHERRY GOO. USE 1/2 RECIPE.
Cut cherries into halves or quarters and place into large bowl. Add add lemon juice, 1/2 cup sugar, 2 Tbs honey, and 1 Tbs vanilla. Toss well to coat. Taste. If not sweet enough, add Splenda.
Line rimed baking sheet with parchment paper or waxed paper. Arrange cherry mix on sheet in even layer. Freeze until solid, about 2 hours.
Mascarpone substitute: 1/2 cup cottage cheese, 1/2 cup Greek yogurt, 2 oz cream cheese, 2 Tbs sour cream, 1 Tbs vanilla. Mix well in blender.
Take 460 g of the well frozen (1/2) and put into blender. Process. Add 60 g of dark chocolate chips. Process. Add 120 g chopped pecans & hit blend for 5 seconds. Pour into half cup serving dishes, cover, and freeze solid. This will take at least 2 hours.
This makes a tart yogurt tasting fruit desert. Very good.
Tips
Can be made ahead. Can be made with prefrozen fruits.
Directions
Freeze final product for at least 2 hours. It should keep several days in the freezer.
