Introduction
I decided to make these muffins for a quick and easy breakfast for a camping trip with the kids. I wanted something healthy, somewhat high in protein, but also something the kids would actually eat. While looking for a recipe, everything I found had protein powder in it, and I wanted mine to have naturally occurring protein in them. I added the honey last second because I knew the kids would want it a little sweeter, but they are naturally sweet (due to the yogurt, soy milk, and fruit), so it's completely optional. Ingredients

3 C Oat Flour
1 C Oats
1 C Dry Roasted Almonds, ground
1 C Dry Milk
1 C Shredded Coconut
1 1/2 C Raisins
2 tsp Baking Powder
2 tsp Cinnamon
3/4 tsp Salt
1 Banana, mashed
1 C Vanilla Soy Milk
1 C Nonfat Vanilla Greek Yogurt
1 C Apple Sauce
1/2 C Honey
1/2 C Egg Whites
Tips
I got 66 mini muffins, and NI is based on 2 of those. if you make the minis not completely full as I did, you can probably get 72 out of the recipe.
I fit all of them in my oven at once, taking up both racks so it took a 25 minutes to bake them all. If you put fewer in, it will take less time.
You can freeze them and take them on the go for a mid-day snack!
Directions
Mix all Dry ingredients in large bowl. Mix all wet ingredients in smaller separate bowl. Dump wet into dry and mix thoroughly. Line muffin tins with muffin papers, spoon batter into papers until almost full. Bake on 350 15-25 minutes.
