Ingredients

    1 medium white onion
    2 tbl olive oil
    1/2 cup lemon juice
    2 tbl vinegar
    2 cup chicken broth
    2 tbl cornstarch
    5 tbl or 3 oz tomatoe paste
    3 tsp sugar
    32 oz almond milk
    9 oz of salmon cut in small pieces
    10 med shrimp cut in small pieces
    You can substitute whatever seafood you prefer just check calorie count.

Tips

You could add some celery when adding onion, sprinkle a tbsp. grated parmasian cheese for additional 21 calories. Serve with a salad makes a great meal


Directions

Heat olive oil, chop onion and add to olive oil. Cook until translucent. Stir in lemon juice, vinegar, sugar and 1/2 cup chicken broth. Cook until reduces about half, mix cornstarch in 1/4 cup broth. Stir into heated mix until it thickens. Add tomatoe paste stir well. Add almond milk and seasonings. Cook on low about 10 min stirring often. Add seafood cook additional 5 minute.
