Introduction

Number of Servings: 12

Ingredients

    4 cups Jasmine (or other long grain rice)
    4 cups chicken stock or 4 cubes bouillon and 4 cups water
    4 cups whole milk (or substitute water or lower fat milk)
    2 jalapeno peppers, chopped
    2 med. yellow onions chopped
    8 cloves garlic, chopped
    1 tsp. cumin
    2 tsp. salt
    2 Chicken thighs and drumsticks, bone and skin removed
    1 bunch of cilantro, chopped

    Can add cheese or sour cream as desired.

Directions

Put all ingredients together in a pan or baking dish (something that's o.k. to go in the oven), except for the cilantro. Stir and bake at 400 for about 60 minutes.

Add chopped cilantro to the top before serving. Cheese or sour cream can be added to taste.
