Introduction

Spicy and easy to throw together. This is more of a casserole since I didn't put much chicken in, but it would be good with more chicken too! Spicy and easy to throw together. This is more of a casserole since I didn't put much chicken in, but it would be good with more chicken too!
Number of Servings: 12

Ingredients

    4 cups Jasmine (or other long grain rice)
    4 cups chicken stock or 4 cubes bouillon and 4 cups water
    4 cups whole milk (or substitute water or lower fat milk)
    2 jalapeno peppers, chopped
    2 med. yellow onions chopped
    8 cloves garlic, chopped
    1 tsp. cumin
    2 tsp. salt
    2 Chicken thighs and drumsticks, bone and skin removed
    1 bunch of cilantro, chopped

    Can add cheese or sour cream as desired.

Directions

Put all ingredients together in a pan or baking dish (something that's o.k. to go in the oven), except for the cilantro. Stir and bake at 400 for about 60 minutes.

Add chopped cilantro to the top before serving. Cheese or sour cream can be added to taste.

Serving Size: makes 12, 1 cup servings
