Ingredients

1 chicken breast no skin no bones
6 cups of low-sodium fat free chicken broth
3 tblspns fresh lemon juice
4 stalks of celery thinly sliced
2 medium carrots diced
1 medium onion chopped
2 large eggs
pepper to taste
1 cup orzo
2tbsp Olive Oil
1 tsp. ground thyme
Directions
makes 12 1.5-cup servings
In a medium sized sauce pan heat the two tablespoons of olive oil. Dice chicken and brown in olive oil..cook through.
Remove chicken and place in bowl.
Now add the celery,carrots,onions and thyme. Stir vegetables in saucepan until onions are transparent. Add 5 cups of the chicken broth and Orzo and bring to a boil then reduce and simmer on low.
With remaining cup of chicken broth warm up on stove(don't boil) In a big bowl whisk the two large eggs and then slooowwwlllyy add the chicken broth whisking the whole time. Then slowly add the egg/broth mixture to the chicken broth and vegetables on the stove stirring the whole time.
Continue stirring until soup thickens. Add pepper to taste.
