Introduction

Ingredients

1 lb dry spaghetti
2 T EVOO
3 cloves garlic, minced
4 large eggs
1/2 cup Asiago (or similar hard grated cheese)
2 T fresh parsley, minced
3 T fresh chives, minced
2 cups snow peas
Tips
Add enough salt to the pasta pot that the water tastes really salty, some chefs say like sea water. For a different, and I think better, taste: roast snow peas coated in EVOO in a 400 degree oven until browned before incorporating in recipe.
Directions
Prepare snow peas.
While pasta pot is coming to a boil, gather and mince herbs and garlic.
Add extra virgin olive oil to herbs and garlic.
Mix with snow peas, toss to coat. S & P to taste.
Beat eggs together well.
Cook spaghetti in large pan of salted water until done.
Immediately after draining pasta, return to pan. Add beaten eggs and stir rapidly until eggs are cooked. Add snow peas to pasta and eggs. Serve with additional Asiago cheese to taste.
Serving Size: makes 8 servings, easily cut in half for a smaller family
