Ingredients

    1 1/2 c. grated zucchini
    2 T minced onion
    1/4 c grated parmesan cheese
    1/4 c. flour
    2 eggs
    2 T mayonnaise
    1/4 tsp. oregano
    salt & pepper to taste
    3 T Safflower oil

Tips

Good for dinner served with tomato sauce and salad on the side.


Directions

Press excess moisture out of grated zucchini between paper towels. Mix everything together except oil. Place oil in skillet and spoon batter (about 2 heaping T per patty) into skillet. Flatten Lightly with spatula. Cook over medium heat until nicely browned on both sides. serve plain or top w/ tomato sauce and grated cheese.
