Introduction
I make this every 2 weeks. We love it! So easy and not as expensive as store bought greek yogurt. I make this every 2 weeks. We love it! So easy and not as expensive as store bought greek yogurt.Number of Servings: 15
Ingredients
-
1 gallon whole milk
2 c dry milk
2 c plain yogurt (for culture starter) It doesn't have to be greek yogurt.
6.5 quart crockpot or larger (if yours is smaller, just halve the recipe)
Tips
Many recipes call for using cheesecloth to strain the whey out, but that becomes very costly and lets too much yogurt out into the whey. I used a very thin cotton cloth (set of 5 I think) that I purchased at Walmart (kitchen towel area). They work perfectly. You will have around 1 quart of whey left over. I use mine to make pancakes & waffles or add in soups. Nice way to add protein. I haven't experimented with using a lower fat content milk...YET.
Directions
Stir 1 gallon whole milk and 2 cups dry milk in 6.5 quart or larger crockpot and cover. Heat to 170 degrees. Turn off and let cool until between 110 and 100. Stir and remove and hardened mixture from the top. Add 2c plain yogurt and stir (this is the yogurt starter). Wrap the crockpot in 2 big towels and let sit undisturbed on flat surface approximately 12 hours. Drain using thin cloth lined colander and place in the refrigerator until desired consistency/thickness. Enjoy!
