Introduction
My grandma always made these oats cookies. This is her recipe and has been in our family for very many years. Where it originally came from I do not know. My grandma always made these oats cookies. Ingredients
-
1 cup Flour
1 cup Coconut (raw shredded)
1 cup sugar
1 cup oats
Dash of salt
.5 cup Butter (I use coconut oil rather then use a little more salt)
1 t baking soda (melt butter or oil and mix together first)
1 tblsp Honey
2 tblsp Milk (mix and heat together with the honey first)
Tips
I use to love eating these cookies as a snack in the morning or afternoon as a kid and so did my kids as they were growing up.
Directions
Heat oven to 350oF. Butter a cookie pan (sheet) with sides. Mix all the dry ingredients together. Mix the milk and honey together, warm it a little in the microwave for about 20 seconds. Add to the mix and then melt the butter or coconut oil and add the baking soda and then only add to the mix. Mix everything well and pour into the cookie pan - press it all flat to all sides and then place it in the oven - bake for about 10 min till lightly brown. Remove from the oven, cut into small cookie or bite size blocks. Wait for it to cool in the pan for a while after cutting into blocks, then only place on a cooling rack, and when it is really cool, put in a tin or jar, with waxpaper layers between them. They tend to stick together otherwize.
