Ingredients

1 3/4 c FLOUR (WHOLE WHEAT, ALMOND FLOUR OR WHITE)
1 tsp BAKING SODA
2 tsp CINNAMON GROUND
2 sticks butter ( unsalted)
1 ZEST ONE ORANGE, LEMON OR LIME.
1/2c STEVIA, TRUVIA OR SUGAR
1/4c BROWN SUGAR
1TBL VANILLA EXTRACT
2tsp MOLASSES
2 EGGS
2 1/2c OATMEAL ROLLED OATS
2/3C CHOCOLATE CHIPS
1c WALNUTS CHOPPED
1/2 CUP RAISINS
2 lg BANANA SMASHED
Tips
cook a dozen cookies at a time on middle rack for 15 minutes at 378* on cookie sheet lined with parchment paper.. Remove to rack to cool. When cool place in Tupperware container.
Directions
Heat oven to 375* measure oatmeal on to a cookie sheet spread out to cover bottom of sheet. bake for 5 minutes, cool.
Whisk together flour baking soda and cinnamon. Melt butter let cool.when cool add eggs, mashed banana and vanilla beat together. add raisins let soak. Combine all the sugars with the zest. Strain the butter into a large bowl, add the sugar mixture and salt, whisk for 30 seconds let stand for 3 minutes, do this 2 more times until thick and shinny. This will enhance flavor and texture of the cookies. Working with mixer stand, combine the flour into the wet carefully. I use the bread dough attachment, mix until fully incorporated. add oatmeal, chocolate chips, raisins, and walnuts. Using an ice cream scoop, scoop out a ball of dough, place on cookie sheet 2 inches apart press flat. Bake 375* 15 minutes remove and cool for 5 minutes.
