Ingredients

    2 tablespoons all-purpose flour
    1/4 teaspoon salt
    1/4 teaspoon paprika
    1/4 taspoon black pepper
    2 chicken breasts, skinned, boned
    1 teaspoon olive oil
    1/2 cup fat-free, less-sodium chicken broth
    1/2 cup dry white wine
    4 teaspoons grated parmesan cheese

Directions

1. Preheat oven to 350 degrees
2. Combine first 4 ingredients in a shallow dish. Dredge chicken in flour mixture. (For better coverage, wash chicken and squeeze excess water - don't dry off)
3. Heat oil in an ovenproof skillet over medium heat. Add chicken; cook 2 minutes on each side or until browned.
4. Add broth and wine. Bring to a boil; remove from heat.
5. Cover and bake at 350 degrees for 30 minutes or until chicken is done.
6. Sprinkle with cheese.

Yields 2 servings (for 4 servings add 2 more chicken breasts)
