Ingredients

    1 c yellow cornmeal
    3 c water
    1/2 package morningstar meatless crumbles
    1/2 medium onion
    1/2 green pepper
    1/2 red pepper
    1/2 package taco seasoning
    3 oz canned tomato paste
    5 oz rotel tomatoes with green chiles
    1/2 c 2% mexican 4 cheese blend
    7 oz fat free refried beans

Directions

Combine cornmeal and water in medium saucepan. Cook until slightly thickened. Spread in a sprayed 8 x 8 baking pan, making a crust. Bake in pan for 10 minutes at 450 degrees. Set aside.

In a large skillet, brown soy crumbled, chopped onion and chopped peppers. Add taco seasoning and saute. Then add tomato paste, canned tomatoes, and corn. let simmer for 10 minutes.

Meanwhile, spread refried beans over the cornmeal crust. Fill with soy and tomato mixture and top with cheese.

Bake for 25 minutes at 350 degrees. Serve with fat free sour cream and diced green onions and guacamole.
