Ingredients

    2 dash Pepper, black
    2 dash Salt
    1 cup, sliced Zucchini
    1 serving King Arthur Whole Wheat Flour-1/4 cup
    1 serving Pillsbury All Purpose Flour-1/4 cup
    0.50 cup Egg White--All Whites 100% liquid egg whites
    1 serving House Autry Cornmeal mix-2 tablespoon

Tips

Great for kids. 10 minutes cooks the fries to have light brown texture. If you like them crispy, put under broiler for 3 mins. To get them crisp like French fries.


Directions

In a plastic bag, combine 1/4 cup of whole wheat flour, 1/4 cup of all purpose flour, 2 tablespoons cornmeal, 1 teaspoon of salt, 1 teaspoon of black pepper. Shake bag up to mix the ingredients. Then cut Zucchini into 1/2 inch width and 3 inch long sticks. Lightly beat two egg whites. Dip sticks into egg whites then put them into plastic bag of mixed flours; shake well to coat sticks. Coat all sides of the sticks. Preheat oven to 475F. Coat baking sheet with cooking spray. Place coated zucchini sticks onto baking sheet not touching other sticks. Then coat all side of zucchini sticks with cooking spray. Bake for 10-13 minutes in center rack of oven. To make extra crispy set broiler for 3 minutes. Serve hot.

Serving Size: makes 20 3inch pieces.
