Introduction

I love Pasta and Mexican(ish) food. I was looking through Pinterest to get some new meal ideas. Ingredients

    2 tbsp Extra Virgin Olive Oil
    .5 large Onions, raw chopped
    2 clove Garlic finely chopped
    2 pepper Jalapeno Peppers, chopped finely
    16 oz Beef, Ground Beef 85/15 (by MONSHE1)
    2 tsp McCormick Cheesy Taco Seasoning (by NANADEB55)
    3.5 cup Hunts Spicy Red Pepper Diced Tomatos
    1.8 cup Broth Beef Les Sodium (Swanson) - 1 cup (240ml) (by KODAKINS)
    2 cup Great Value Sharp Shredded Cheddar Cheese
    3.5 cup (8 fl oz) Water, tap
    2.5 cup elbow shaped Macaroni, enriched

Tips

My uncle likes things really cheesy so I purchased another back of cheese and sour cream for him, but he didn't even want to add it and liked it just the way it was , very unusual for him.


Directions

Original recipe called for a 12" skillet, I prefer using a large cooking pot
on medium heat
Saute up onions, jalapeno and garlic together until onions are clear
add ground beef and break up with spatula (I used a wooden spoon)
cook until no pink left in ground beef. Original directions called to drain the meat mixture, however I had nothing to drain when I made this
Next add can f tomato's, Beef Broth (I poured into empty tomato can to get everything out of the can, and 1 can of water
cover and cook about 15 min, making sure to stir at least twice.
If there is any liquid left after 15 min, turn the heat up and continue stirring until most of it is gone.
remove from heat and slowly add shredded cheese, until melted.




Serving Size: makes about 10 1 cup servings (depending on size of pasta)
