Introduction

A great way to use some of those zucchini that got a little to big. A great way to use some of those zucchini that got a little to big.
Number of Servings: 8

Ingredients

    2 large Egg, fresh, whole, raw
    1 cup kernels Yellow Sweet Corn, Frozen
    0.50 cup, chopped Onions, raw
    3 cup, sliced Zucchini
    1 serving Nabisco Ritz Crackers (5 crackers)
    6 oz Cabot Sharp Cheddar Extra Light Cheese, 75% less fat

Tips

I omit butter for sauteing onions from the original recipe and use low fat cheese. from an old Lancaster County PA cookbook


Directions

Saute onion in a large non-stick pan. Steam zucchini for 8 minutes. combine all ingredients in the onion pan except crumbs and mix well. Pour into a greased 8x8 baking dish. Sprinkle with crumbs and bake at 350 for 30 -40 minutes.
