Ingredients

    20 oz 90% Lean Ground Beef/Ground Sirloin
    1 packet Taco Seasoning (low sodium will reduce the sodium in this recipe significantly)
    One head of Iceberg Lettuce, chopped
    1 can Goya Black Beans
    1 cup, shredded Cheddar Cheese
    Garden Fresh Gourmet Salsa, your choice of mild to hot
    About 2 servings Tortilla Chips, roughly crumbled

Tips

You can also add my fried corn recipe as an additional garnish, or chopped avacado.
For my family, we let everyone make their own salad at the table. Even the picky eaters get exactly what they want.


Directions

Brown beef and season per taco seasoning packet instructions.
Chop iceberg lettuce into salad size pieces.
Drain and rinse black beans. Add a tbsp. of salsa to the beans and heat in the microwave for 3 minutes.
Layer the salad in this order:
Lettuce
Beef
Beans
Shredded Cheese
Salsa (about 3 tbsp per serving)
1/4 of the crumbled chips per individual salad

Serving Size: Should make about four salads, or make in one large bowl for folks to spoon out.
