Ingredients

    12 oz Black Forest Boar's Head Ham
    12 large Egg, fresh, whole, raw
    .50 cup bell pepper, red, sweet, raw
    .33 cup, chopped green onions
    1 tbsp Extra Virgin Olive Oil
    0.25 cup Kraft 2% Shredded Cheddar Cheese

Directions

Preheat oven to 375. Dab a bit of olive oil on a paper towel, and wipe the inside of each muffin tin. You can also use a spray to do this. In a small skillet, sauté the red bell pepper and green onion in the 1 Tbsp. of olive oil until soft. Place 1 slice of ham into each muffin cup, shaping it so that the bottom of the cup is completely covered, and the rest of the ham goes up the sides. Scramble the eggs thoroughly, and pour an equal portion into each ham cup. Add an equal portion of red bell pepper and green onion to each egg cup, and top with a sprinkling of cheddar cheese. Bake in a 375 oven for 15-20 minutes. Can reheat in microwave for about 15 seconds. This depends on your own microwave.
