Introduction

Light and fresh dinner. Smaller portion, but supper filling. Light and fresh dinner. Smaller portion, but supper filling.
Number of Servings: 4

Ingredients

    2 cups white reice
    12 oz shrimp (peeled and devained)
    4 cups chopped broccoli
    1 cup diced green peppers
    1 cup diced red peppers
    1/2 cup dice white onion
    3 cloves garlic
    1 lemon
    2 tbsp extra virgin olive oil
    2 tbsp white wine
    basil
    pepper
    italian seasoning

Directions

Make the rice as normal but add in basil, pepper and italian seasonings when done cooking.
Saute garlic and onion in 1 tbsp olive oil until soft. Add in the peppers and broccoli and cook till al dente.
Add the other tbsp of olive oil and shrimp.
Add white wine and juice of 1/2 lemon.
Cook shrimp until done.
Scoop shrimp and veggie mixture over rice and serve with lemon wedge.
