Introduction

A great alternative to straight mayonnaise for sandwiches, salads, or dipping sauces (it's fantastic with roasted sweet potato wedges). I use Hain's Safflower mayonnaise to make this (b/c it doesn't contain transfats), but you could use whaterver mayo you prefer--use low fat if you like to cut the calories even further. Ingredients

    6 T. mayonnaise
    4 tsp. lime juice
    2 garlic cloves, roughly chopped
    1 T. chopped chipotle chili en adobo (with sauce)
    4 T. chopped curly parsley
    3/4 tsp. ground cumin

Directions

Combine all ingredients in a mini food processor. Whirl till everything is smooth and well combined.


Chill before serving. Keeps well in the fridge for 2-3 weeks (and probably longer, but it's usually gone by then!)

    I mde this with Greek yogurt but fat cuts heat and with just the yogurt it was a bit too hot so I added 1 tablespoon of mayo. Perfect and yummy - 2/24/12

    This is a really nice way to spice up a turkey sandwich. I made it with Helmann's Light Mayo. - 7/24/08
