Ingredients

    8 serving dried red chile peppers.4 chopped , 4 whole
    4 clove Garlic finely chopped
    1 large onion finely chopped
    Ginger Root,1/4 cup slices or a 2" piece finely chopped
    1 tsp Cumin seed ground
    1 tsp Coriander seed ground
    1 tsp fenugreek ground
    1 tsp Garam Masala
    1.75 cup Canned Tomatoes (14oz)
    15 grams Tomato Paste (1 TBSP)
    24 oz Tyson boneless, skinless chicken breast
    2 tbsp Extra Virgin Olive Oil divided

Tips

You can change the meat to any kind of meat or even fish will work.just adjust cooking time


Directions

Heat 1Tbsp oil in pan add onion, garlic and ginger stir until golden,
Add cumin, coriander and fenugreek cook over medium for about 5 min. Stir in tomatoes ,tomato paste and the whole and chopped chiles, bring to a boil and cook over low heat for 10 -20 minutes to let flavours meld. Meanwhile add remaining oil to a skillet and sear the chicken until browned on all sides , add to tomato mixture cook until chicken is done. Serve with Raita, rice or veggies.
