Introduction

This is a slighly healthier version of the classic oatmeal cookie. I do not care for raisins as in traditional oatmeal cookies. This recipe will work the same adding 1 cup of raisins. Ingredients

    1 cup Smart Balance Buttery Spread
    1 cup Brown sugar, packed
    1 Egg (large)
    1 tsp Vanilla
    1.5 cups All-purpose Flour
    1 tsp Baking Soda
    .25 tsp Salt
    2 cups Quick-cooking rolled oats (not instant)
    3 tbsp Flax Seeds

Directions

Cream Smart Balance and brown sugar in large bowl. Add egg and vanilla. Beat well.

Add four, baking soda and salt. Mix until no dry flour remains.

Add oats and flax seeds. Mix well. Drop 1 tbsp each about 2 inches apart onto greased cookie sheet. Bake at 350 for 8 to 10 minutes until golden.

Makes about 3.5 dozen (42) cookies.

    Made these tonight, with a few changes:
    1. Used 1 cup of honey almond granola instead of 2 cups of rolled oats.
    2. Used 2 Parkay marg.sticks (1 cup) instead of buttery spread.
    3. Tried to chop/grind flax seeds with my Sunbeam Oskar Jr. - didn't cut a single seed.
    42 cookies; baked 8 min; YUMMY!
