    1 T olive oil
    1 c chopped celery
    1 c chopped onion
    2-3 garlic cloves, minced
    1 lb ground turkey breast, 93% lean
    4 c water
    1 c sliced carrots
    1 can french-cut green beans, drained and rinsed
    1 c frozen whole-kernel corn
    1.5 tsp ground cumin
    1 tsp chili powder
    2 bay leaves
    6 cubes low sodium beef bouillon
    15 oz can red kidney beans, drained and rinsed
    10.5 oz Rotel tomatoes with chilies, undrained
    1 can Campbell's condensed tomato soup, rinse can with a little water and add to the pot


In a large stock pot over medium heat add olive oil, celery, onion, garlic and turkey. Cook 5 minutes or until ground turkey is browned, stirring to crumble. Add water and remaining ingredients. Bring to a boil. Cover, reduce heat, and simmer for 30 minutes. Discard bay leaves and serve.
