Ingredients

8 oz Spaghetti, uncooked
2 Medium Onions chopped
3 Cloves Garlic, minced
1 Large Green Bell Pepper, chopped
2 Medium Ripe Tomatoes, chopped
1 cup Chicken Broth
3 oz Philadelphia Neufchatel Cheese
1 Tbsp Dried Basil
1 cup Cooked Shrimp, in small pieces
5 cups Fresh Spinach
Salt & Pepper to taste
Directions
Cook spaghetti as directed.
In large non-stick skillet sprayed w/cooking spray, saute onion, garlic & green pepper until just tender. Add chicken broth and basil; when hot add Neufchatel cheese, stirring until just melted. Stir in cooked shrimp. When hot, add fresh spinach leaves, stirring until spinach is wilted and hot. Remove from heat and stir in fresh, chopped tomatoes. In large bowl, toss cooked spaghetti with sauce until pasta is well coated. Season with salt and pepper, to taste.
Makes 6 ample servings.
