Ingredients

    3 Medjool dates - pitted
    4 tbsp *Flax Seed Meal (ground flax)
    .5 cup hot Water
    .5 cup Zucchini (Grated)
    2/3 cup blueberries, frozen
    1 large Egg (omit for vegan and subsitute flax egg or chia.)
    .5 cup Almond milk
    1/4 cup quick cook oats
    3/4 cup Organic All-Purpose White Flour
    1/4 cup Whole Wheat Flour
    1 tsp baking powder
    .5 tsp Baking Soda
    1 dash Salt
    2 tbsp Nutiva shortening palm and coconut oil, melted

Directions

Finely dice dates. Add hot water and let soak briefly. Add flax seed. Add all wet ingredients including zucchini and blue berries. Add melted shortening. Add all dry ingredients and mix well. Portion into lined muffin pan, about 1/4 cup each. Bake at 350 for 20-25 min or until a toothpick comes out clean.

Serving Size: Make about 8 muffins
