Ingredients

    1.5 lb boneless, skinless chicken thighs
    1 jar Trader Joe's Hatch Valley Salsa
    1 jar Trader Joe's Salsa Verde
    1 15 oz can Great Northern Beans or other equivalent
    1 quart low sodium, non fat chicken broth
    2 tsp Cumin

Directions

Place all ingredients in crock pot, adding chicken broth last. Give it a quick stir. Cook on high 3-4 hours or low 6-8 until chicken pulls apart with a fork. You can substitute chicken breasts but cook less so they don't dry out.

Remove chicken and shred with fork. Optional: blend other ingredients for a smoother soup.

Serve with Cilantro, chopped avacado, cheese, etc.
