Ingredients

1 serving Flour Tortilla (Soft Taco Shell)
0.2 can (6 oz) Tomato Paste
1TBL olive oil
1/8 cup chopped onion
1/2 tsp minced garlic
Mrs. dash Italian blend
A pinch of red peeper flakes (or to taste)
1/8 tsp oregano
Pinch thyme
1/2 tsp ground black pepper
1 tsp veggie stock base
1/3-1/2cup, chopped Broccoli, fresh
1/8 cup Sweet Corn, Fresh
1/4 cup Cheese - Kraft Mozzerella Shredded
3 serving (about 3 TBL) (Veg) Pepper, Bell (mixed)
Directions
Preheat oven to 350 degrees
In a small saucepan pot, heat oil for 2 mins over medium high heat. Add garlic, onion and spices stirring often.
Lower heat to medium/low.
Add tomato paste and 1/3 cup water (thin this sauce to your liking by adding water a TBL at a time until you get the consistency you prefer)
You can use any style tortilla, it will make your cook time vary
Lay out tortilla, add sauce, veggies (mix and match! I take from the cabinet and canned/frozen from our garden), and top with cheese.
Place on a cookie sheet lined with a silicone mat (you can substitute spray oil if need be)
Bake for 9-14 minutes until cheese has melted and tortilla is to your desired crisp.
