Ingredients

    2 tsp Turmeric, ground
    63 Brussels sprouts, fresh
    25 Carrots, raw
    117 Eggplant, fresh
    1 clove Garlic
    0.50 medium (2-1/2" dia) Onions, raw
    21 Parsnips
    65 Zucchini
    77 Yellow Peppers (bell peppers)
    7 gram(s) Biona Coconut Oil
    41 gram Cavolo Nero
    115 gram(s) Dunns River Black Beans, 230g drained weight
    400 gram(s) Veg stock, or as much as you need to cover all the veg

Tips

Season to taste with pepper or other herbs and spices. Use more or less stock depending on how thick you like your soup.


Directions

Fry off the onion in the oil. Add all other ingredients, cut up to whatever size you like. Bring to the boil and then simmer until the veg is done to your liking.

Serving Size: Makes 2 big bowls
