Ingredients

    24 oz Tomato, grape (3oz = appro 12 tomatoes)
    4 clove Garlic
    1 tbsp Oregano, ground
    1 tbsp Balsamic Vinegar
    3 tbsp Olive Oil
    .1 tsp Pepper, red or cayenne
    8 oz Barilla Pasta, Penne
    4 oz Feta Cheese
    2 serving Black Olives - Sliced (2 Tbsp.)
    3 tbsp Pine Nuts

Directions

Cut tomatoes in half and roast at 375 degrees for approx. 45 min with garlic, oregano, red pepper flakes, balsamic, and olive oil. Toss with cooked pasta (I actually use farfalle for this, not penne), crumbled feta, olives, and toasted pine nuts.

Serving Size: Make 6 servings.
