Introduction

Number of Servings: 4

Ingredients

    1 can kidney beans (dark for more vitamins)
    1 can navy beans
    1 small packet frozen veggies
    1 can petite diced tomato or
    3 freshly cut tomatoes
    1 packet mild/medium/hot chili seasoning
    Olive oil (enough to shimmer veggies in~4tbsp)

    Optional: 1/2 green pepper
    1/2 red pepper
    1/2 yellow pepper

Directions

Put veggies (including peppers) in deep pot with oil and shimmer until veggies are soft. Add all the rest of the ingredients except the tomatoes and cook for about 10 minutes. Add diced tomatoes and cook until you think it is ready (about 5-10').
