This is a light , fresh and pretty healthy salad great for entertaining!There are so many additions like green onions, red onions, mushrooms, pepperoni, olives, carrots, apples, peperoncinis, and so much more but I like this easy version :) This is a light , fresh and pretty healthy salad great for entertaining!

Ingredients

~1 Large Cucumber (peeled if desired), chopped
~2 tomatoes, chopped (either vine ripe or 1C cherry tomoatoes halved)
~.1 cup (approx 2-3 TBS) crumbled reduced fat Feta, Gorgonzola or Bleu cheese, depending on your taste
~2 tbs olive oil
~2 tbs balsamic vinegar (I prefer white balsamic)
~Add salt, pepper, parsley to taste
~For a more Italian flavor, add basil and oregano to taste
Directions
Mix all ingredients in a large bowl. Chill before serving for best flavor but you can definitely eat it right after preparing!
Makes approximately 3 cups depending on size of vegetables and size they are chopped.
