Ingredients

    2 tbsp Coconut Oil
    1 medium onion, diced
    1 large carrot, diced
    1 1/2 cups cooked lentils
    1/2 cup Salsa
    3 cup Pacific Vegetable Broth
    2 Yukon Gold potatoes, diced

Tips

I came up with this recipe to use some lentils in the refrigerator, now it is a favorite. Uses pantry staples too!


Directions

Saute onion and carrot in coconut oil. Add cooked lentils, salsa, broth, and raw potatoes. Cover and simmer 30 minutes. I don't add more salt, the broth has enough.
