Tips

Get creative. The recipe as entered would be better if you add .5 to 1 TBSP of greek yogurt-based tzatziki sauce into each won ton cup to give it a bit more flavor.

Feta doesn't melt :)

Directions

::INGREDIENTS::
12 won ton wrappers, thawed
1 10-ounce package of frozen chopped spinach, cooked
12 TBSP crumbled feta cheese, preferably not fat free (see tips)
12 TBSP sliced green olives with pimentos

::DIRECTIONS::
1. Preheat oven to 375F (190C)

2. Spray 12-cup cupcake/muffin pan with nonstick spray and gently press in one won ton wrapper into each cup, and place in pre-heated oven for 8-10 minutes, until very lightly golden brown

3. Cook spinach if frozen, ensure to drain very well (press out as much water as possible)

4. When won tons are light golden brown, remove from oven and spoon in 1 TBSP of spinach, 1 TBSP feta, and 1 TBSP olives into each cup.

5. Return to the oven and bake for approximately 8 minutes, until feta is warmed. Add additional time if preferred, but the won ton will brown quickly.

6. Serve warm

Serving Size: 2 won tons (makes 12 won tons, or 6 servings)
