Introduction

This is a salad I had a wedding and loved. I tweaked it a bit to be more diet-friendly. This can serve 1 as a meal alone, or two as the beginning course of dinner. Ingredients

    6 oz shrimp
    2 Tbs chopped walnuts
    2 Tbs dried cherries
    2 Tbs crumbled blue cheese
    2 Tbs Fresh Gourmet Lightly Salted Crispy Onions
    3 C lettuce mix
    20 Sprays Ken's Lite Accents Honey Mustard Vinaigrette

Directions

Pan fry shrimp in a skillet with a litte bit of olive oil Pam. Top lettuce on large plate or bowl with remaining ingredients and shrimp. Finish with honey mustard vinaigrette spray.

Serves 1 for main meal or 2 as a starter.
