Ingredients

    1 large Onions, raw
    2 cup Beans - Black, dried (by CELLOMARM)
    4 serving Pacific Natural Foods Organic Low Sodium Chicken Broth, 1 cup
    1.5 cup, chopped Green Peppers (bell peppers)
    2 clove Garlic
    1 cup Yogurt Plain Greek Yogurt, non-fat
    2 tbsp Chili powder
    1 tsp Cumin seed
    1 tsp Condiments: Tobasco Sauce (McIlhenny) (by DEY101)
    2 tsp Salt
    1 serving Bertolli EVOO (1 tbsp)

Tips

Can use canned black beans, just drain liquid. Also can be made vegetarian friendly by substituting the chicken stalk with vegetable stalk.


Directions

Put dried black beans in pot with 6-8 C of water and bring to a boil, cook for 2 minutes, then cover and let sit for 1 hour. Drain beans. Saute chopped onion, garlic, and green bell pepper in olive oil over medium heat until cooked through. Add in dried beans, chicken stalk, 2 cups of water, and spices and bring to a boil. Cook for 20 minutes or until beans are soft. Once cooked through, used hand blender adn blend ingredients until smooth. Add one cup of yogurt and blend in. Makes 8-10 servings.

Serving Size: Makes 8-10 1 cup servings.
