Introduction
This is a great, low fat, high protein soup. You can make it as spicy as you like. If you are concerned about sodium you can use ground turkey and add spices that you like and use low sodium tomato paste. Ingredients

1 lb Turkey Sausage
Tomato Paste (3/4 of small can)
1 small onion
1 tsp ground cumin
.5 tsp crushed red pepper flakes
.5 tsp garlic powder
.5 tsp black pepper
1 540 ml can black beans (approx. 2 cups)
100 grams of baby carrots sliced
1 cup celery sliced
1 can corn
6 cups water
salt to taste
Directions
Remove sausage from casing and form into small meatballs. In a large pot heat up 1 tsp of oil and fry meatballs lightly.
Remove meatballs and drain on paper towel. Add onions and cook until softened. Add crushed pepper flakes, pepper and garlic and cook for another minute.
Return meatballs to pot. Add tomato paste and stir for another minute. Add water, carrots, celery and black beans.
Cover and simmer for about 30 minutes. In the last 10 minutes add the corn. Season to taste.
