Introduction

I make this and eat it all week for lunch at work. I make this and eat it all week for lunch at work.
Number of Servings: 12

Ingredients

    2 cup beets, peeled and chopped
    2 cup Brussels sprouts, ends removed, cut in half
    1.5 cup, fresh broccoli, in bite-sized pieces
    2 cup yellow onion, chopped
    1 Med. green bell pepper, chopped
    6 cup cauliflower, chopped
    3 cups sweet potatoes, cubed
    4 tbsp grapeseed oil (or olive oil)
    3 tbsp Balsamic vinegar
    1.5 tsp salt
    1 tsp cumin seed
    1 tbsp chili powder
    1 tsp paprika
    1 tsp oregano, ground

Directions

chop the veggies and put in an extra large bowl. Top with oil and vinegar, toss. Add seasoning in three parts, tossing in between. Place in a large roasting pan at 400 degrees for 20 minutes. Stir and roast another 10 minutes or to desired softness of veggies. Stores in fridge for days--This is a great lunch!
