Introduction

This stew is amazing! Freezes great too. I make a few of them at once by dumping all the ingredients into a large Ziploc bag then freezing. Then just thaw and dump in the slow cooker. Ingredients

    1.5 lbs Beef chuck - arm pot roast is lower in fat than chuck and can be diced
    .5 cup Beef Broth
    .5 cup Diced onion (lg chunks)
    1 cup Diced Green Pepper (lg chunks)
    3 cups Diced Tomotoes with juice
    .5 cup Tomato Paste
    1 Tbsp Fresh Garlic
    2 Tbsp Red Wine Vinegar (could not find in ingredient list)
    .5 tsp Oregano
    .5 tsp Pepper
    3 Tbsp Corn Starch
    1/2 Cup Crumbled Feta Cheese

Directions

Add everything together in slow cooker except feta. Stir well. Cover and cook on low 8-9 hours.
Sprinkle feta on top before serving.
Can be eaten on it's own or served over noodles or rice.
