Ingredients

    3 link (4" long x 1-1/8" dia) Smoked Sausage, pork and beef (sliced)
    3 cup, chopped Kale
    .5 cup Black-eyed peas (cowpeas), immature seeds, cooked, boiled, drained, with salt
    0.5 cup Del Monte Petite Cut Diced Tomatoes
    .20 cup, chopped Onions, raw
    2 clove Garlic
    3 tsp Bacon grease
    1 cup Brown Rice, long grain
    1 cube Chicken bouillon

Tips

I have only tried this once and it turned out great for us, but I don't measure so you may need to adjust it. You can use different types of beans or spinach instead of kale.


Directions

Cook rice with chicken bouillon (I use a rice cooker)
Use bacon grease (or olive oil) to cook chopped onions and garlic
Add kale and a a tablespoon of water and cover, 2-3 min.
Add sausage and a few more tablespoons of water, cover 2-3 min
Add black beans, tomatoes and pepper. Mix.
Serve over brown rice

    Incredible!
    I enjoyed this, just changed the bacon grease with coconut oil and bouillon broth with homemade soup...as I have a sodium issue ... that really was a great one, my mom and I both were able to enjoy it thank you - 8/2/16
