Introduction
I wanted to try something a little different with boneless, skinless chicken so I thought I would mix some of my home made taco seasoning with a bit of flour, sauté them and serve with our green tomato salsa. I happened to only have 3 breasts on hand but you can adapt it for four or more. Ingredients

3 5 oz Chicken Breast - boneless, skinless, raw
1 Tbsp Taco Seasoning
1/4 cup All Purpose Flour, Unbleached Enriched
4 Tbsp Safflower Oil - Irresistibles
6 Tbsp Green Tomato Salsa
Directions
Flatten each chicken breast to about 1/4" thick.
Mix the taco seasoning with the flour on a plate.
Heat the oil in a large pan. When the oil is hot, dredge each breast in the flour, shaking off the excess and place them in the hot oil. Cook the chicken for 5 - 6 minutes per side. When cooked remove from pan and place on a paper lined plate to remove any excess oil.
Serve with 2 tablespoons of green tomato salsa, either on top or on the side.
Serving Size: Makes 3 5 oz. servings
