Introduction

Ingredients

    3 lg. bananas mashed (see note)
    1/2 C. lowfat buttermilk
    1/2 C. applesauce (see note)
    1/2 C. brown sugar
    1 egg
    1 1/2 C. Whole wheat flour
    1 tsp. baking powder
    1/2 tsp. baking soda
    1/2 tsp. salt
    1/2 C. Pecans

Directions

Mash bananas and add buttermilk. Set aside. Mix applesauce and brown sugar together. Beat in 1 egg. Add flour, baking powder, baking soda, and salt. Mix in bananas and buttermilk. Stir in nuts. Spray Pam in muffin tin. Divide batter into muffin pan Bake at 350 for 24-26 minutes. Makes 12 muffins.

    O.K.
    Had a nice sweet flavor but the muffins were extremely thick and dense, not fluffy at all! I ate some but my family wouldn't touch them. I'm going to try again but next time using some bran-less flour. - 1/30/09
