Easy to make fluffy oatmeal cranberry cookies that are low on calories but not on flavor! Gives a nutritious boost without the sugar of and butter of regular cookies. Can be made even healthier if you add unsweetened dried cranberries or can be made slightly sweeter by using sweetened applesauce. Ingredients

0.5 cup Flour, white
0.5 tsp Cinnamon, ground
0.5 tsp Baking Soda
0.25 tsp Salt
1 serving Bob's Red Mill Almond Flour - per 1/4 Cup
0.25 cup, hulled Sunflower Seeds, without salt
0.5 cup Oats, Quaker
0.5 cup Cranberries, dried, sweetened (craisins)
0.5 cup Applesauce, unsweetened
1 large Egg, fresh, whole, raw
1 tbsp Crisco Pure Vegetable Oil
0.5 tsp Vanilla Extract
Directions
Preheat oven to 375 degrees Farenheit
1. Combine dry ingredients (flour, cinnamon, baking soda, salt, almond flour, oats, sunflower seeds)
2. Beat eggs, add applesauce, vanilla extract, vegetable oil, and dried cranberries
3. Combine wet and dry ingredients until mixed but do not overmix
4. On a piece of baking paper or wax paper drop 12 spoonfuls of the cookie batter
5. Bake in the oven for 8-10 minutes (depending on oven)
6. Cool on wire rack
