Introduction

Ingredients

    2lbs (about 8) Tilapia filets
    1.5 cup corn meal
    1.5 tsp Chia Seeds
    4 tbsp Lemonaise or Mayo
    1 tsp Garlic powder
    1 tsp Onion powder
    1 tbsp Parsley, dried
    1 tsp Salt
    .5 tsp Paprika

Tips

Also good pan fried in olive oil or butter if you don't mind the extra fat.


Directions

Rinse and pat dry tilapia with paper towel. Mix cornmeal, chia, and seasonings together in a shallow dish. Smear mayo on one side of filet, overturn into mixture, spread mayo on other side and then flip, pressing into the mixture and coating both sides. Place on cookie sheet sprayed with cooking spray. Bake at 400 for 15 to 20 mins depending on thickness, flipping halfway through.
