Introduction

Orange Chicken Orange Chicken
Number of Servings: 4

Ingredients

    1 1tsp Olive Oil
    1 medium (2-1/2" dia) Onions, raw
    1 3/4 cup (8 fl oz) Chicken Broth
    1 cup Brown Rice, long grain
    4 thigh, bone and skin removed Chicken Thigh
    zest and juice of two oranges
    2 tbsp Pine Nuts toasted
    2 tbsp Parsley
    1 tsp salt

Directions

Saute onion in oil until soft. In a 2 qt baking dish, add rice, broth, 1/4 c. orange juice, 2 Tbs zest and 3/4 tsp salt. Toss chicken with 1/4 tsp salt, pepper and oil. Nestle chicken in rice mix. Cover with foil and bake 55 mins. at 375. Remove foil and drizzle with 2 Tbs. orange juice. Cook 50 minutes longer or til most of liquid is absorbed. Drizzle chicken with juice and sprinkle with zest, pine nuts and parsley.
