Introduction
I've been seeing all kinds of Pinterest pins for making omelets in a waffle iron. So, I decided to give it a go. My waffle iron (makes two at a time) can only take 3 eggs at a time (as I'm still wiping egg off my counter). It took about 3 minutes for a simple and tasty omelet! I'm making this again. Ingredients

3 large Egg, fresh, whole, raw
3 medium (4-1/8" long) Scallions, raw
1 medium whole (2-3/5" dia) Tomatoes, red, ripe, raw, year round average
28 gram(s) Kirkland Mexican Blend Cheese
.15 cup Milk, 1%
1 dash Salt
1 serving Market Panty - Canola Oil cooking Spray - .25 sec spray = 1 serving (by PANDAEVA)
Directions
Mix together all the ingredients, except for the cheese.
Spray a waffle iron (mine is non-stick) with canola spray
Pour the egg mixture evenly on the preheated waffle iron.
Add the cheese, if desired
Allow to cook for about 3-4 minutes.
Serve.
Serving Size: 2 waffles
