Introduction

These tasty muffins are perfect with coffee and you don't have to feel guilty about eating them! These tasty muffins are perfect with coffee and you don't have to feel guilty about eating them!

Ingredients

    1.5 cup Oat Bran
    1 cup (8 fl oz) Yogurt, plain, skim milk
    1 cup, packed Brown Sugar
    0.5 cup Whole Wheat Flour
    1 large Egg, fresh, whole, raw
    1 cup, unthawed Blueberries, frozen (unsweetened)
    1 lemon zested and juiced
    3 tsp Baking Powder
    1 tsp Baking Soda
    1 tsp Salt
    1 tsp Nutmeg, ground
    1 tsp Cinnamon, ground

Tips

These are so fast and so easy, make ahead the night before and put the batter in the fridge. Wake up, preheat the oven and put into a lined muffin pan and bake for fresh muffins in the morning!


Directions

Mix all the wet ingredients in a bowl (yogurt, egg, lemon). Add sugar and oat bran and combine until a paste.

Next, add the remaining dry ingredients (flour, baking powder, baking soda, salt, nutmeg and cinnamon). Mix until it is just incorporated.

Avoid over stirring. You may need to add a splash of fat free milk if the flour and dry ingredients are not readily incorporated.

Fold in the frozen blueberries. Place muffin liners in a 12-muffin pan and fill 2/3 of the way full with muffin mixture.

Bake at 350 F for about 15-18 minutes, until a toothpick inserted in the center is clean.
