Introduction

This minnestrone has no pasta, so technically it isn't minnestrone. But it is similar. This minnestrone has no pasta, so technically it isn't minnestrone. But it is similar.

Ingredients

    1 15 oz. can Great Northern beans, drained
    1 15 oz can chickpeas, drained
    1 28 oz can whole tomatoes
    1 large onion, chopped
    3 large carrots, peeled & chpped
    3 garlic cloves, peeled & chopped
    1/4 large head of cabbage
    2 tomato cans filled with water
    salt, 1 tsp
    1 bay leaf
    Beet greens, 1 bunch, rinsed well & chopped
    1 cup frozen peas


Directions

Put all ingredients except beet greens & peas into crock pot and cook on low 8-10 hours.

Add beet greens & frozen peas and cook until heated through.

You can add other vegetables if you like. Save fast-cooking veggies until the end of the cooking process. You can use whatever greens you like; omit the cabbage and increase the other greens; whatever you have on hand. This will change the nutrition info though.
